Cranberry Salsa

No, it’s not a dance, but a delicious and healthy take on the old standard jelly-goo stuff (that Papa Steve adores, but oh, well.)

2 bags of cranberries, picked over and washed

1/2 jicama, shredded

Juice and zest of 1 lime

1/4 cup orange juice

1/2 cup sugar (or more, to taste)

4 jalapenos, diced (seed the jalapenos for less heat)

chopped cilantro (optional)

1/2 cup toasted pecans

Pinch salt

Slice the cranberries in a food processor into thin slices (aren’t they beautiful?!)  Change to the shredding blade and shred the jicama (you can add more than the recipe says if you like jicama).  Remove both to a bowl and add the rest of the ingredients.  Taste and adjust as you like.

Tastes yummy served with baked cinnamon-sugar flour tortillas, over goat cheese, as a topping with chicken soft tacos, alongside your Thanksgiving turkey, or just by itself as a salad!
