Pizzelle Cookies with Mascarpone (Italian Ice Cream Sandies)
Absolutely the BEST cookie to take on a glamping adventure! Tastes like an ice cream sandwich, but doesn’t melt! Our glampers LOVE it! It does require a special pizzelle iron that we purchased from everythingkitchens.com but these cookies are so beautiful, and great for gifts all year long! A traditional Christmas cookie, but we have mixed it up a little for a summertime glamping treat!
Recipe for the cookies:
1 1/2 cups white sugar
1 cup butter, melted
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
4 teaspoons baking powder
- In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, and vanilla, mix well. Stir in the flour and baking powder.
- Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.
Add cinnamon and local honey to your mascarpone and mix well.
Once cookies are cooled down, spread 1 tablespoon of mascarpone mixture to cookie, and top off with another cookie. Refrigerate until ready to serve.
