Poached Pears in Honey, Ginger and Cinnamon Syrup
A Fall Favorite- Delicious served with Pumpkin Pancakes, Pork Roast, Pumpkin Oatmeal, ice cream or just on their own!
1 750 ml bottle of moscato wine or other sweet dessert wine
2 cups simple syrup (made by combining 2 cups sugar, 2 cups water, boil gently for 5 minutes)
1 cinnamon stick, broken
2 tablespoons honey
1 piece of ginger, about 3/4 inches
1 vanilla bean, split lengthwise
6 small firm ripe Anjou pears
In a sauce pan large enough to hold the pears combine the wine, simple syrup, cinnamon stick, honey, and ginger. Scrape the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally until the pears are just tender. Remove the pears from the liquid and cool.
Continue to simmer the liquid until reduced by half, about 15-20 more minutes. Cool to room temperature and then strain. Put the pears and the liquid back together and enjoy any way you can imagine!
