Winter Kale Salad with Maple Vinaigrette
After thoroughly cleaning the kale, tear into pieces. You can use the stems too, unless they’re big and tough. Peel, and slice 2-3 crispy pears (as-ian style pears are good here), and place in a bowl with a handful of dried cranberries. Mix the dressing:
1/4 cup of pure maple syrup
2T Balsamic vinegar
1/2 t. dijon mustard
1/4 cup toasted walnut oil
Salt and pepper to taste
Add a bit of dressing to the bowl with the pears and cranberries, to marinate. Pour some dressing over the bowl of prepared kale and massage with your hands, until slightly wilted. Add in the bowl of marinated fruit and mix thoroughly. Portion out salad, top with your choice: goat cheese, smoked gouda cubes, pepitas, toasted walnuts- use your imagination!
